Ingredients

  • 3 medium red potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup onions, caramelized
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp Cajun seasoning
  • ½ cup sliced pickles (optional)
  • 1 cup shredded lettuce (optional)

Instructions

  1. Toss diced potatoes with olive oil, salt, and pepper.
  2. Preheat air fryer to 400°F and cook potatoes for 16 to 18 minutes, shaking halfway, until golden and crispy.
  3. While potatoes cook, heat a skillet over medium heat with a little olive oil.
  4. Add onions and cook, stirring occasionally, for 10 to 15 minutes until soft and caramelized. Remove and set aside.
  5. Increase skillet heat to medium-high, add ground beef, and smash it into the pan.
  6. Cook for 5 to 7 minutes until browned and cooked through, seasoning with salt and pepper.
  7. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, and Cajun seasoning until smooth.
  8. Assemble bowls by layering potatoes, beef, caramelized onions, and shredded cheese.
  9. Drizzle with sauce and finish with optional pickles and lettuce.
