Description

A delicious dessert of sticky rice paired with ripe mango and drizzled with coconut sauce.


Ingredients

  • 1 cup glutinous (sticky) rice
  • 1 ½ cups coconut milk
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • optional sesame seeds or mung beans (for garnish)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak it in water for at least 3 hours or overnight.
  2. Drain the soaked rice and place it in a steaming basket lined with cheesecloth. Steam the rice over boiling water for approximately 20-25 minutes or until tender.
  3. While the rice steams, mix the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves but do not boil.
  4. Once the rice is cooked, transfer it to a bowl. Pour 1 cup of the warm coconut sauce over the rice and stir gently to combine. Let it rest for about 10 minutes to absorb the flavors.
  5. Prepare the mango by peeling it and slicing it into thin wedges.
  6. To serve, place a portion of sticky rice on a plate, add slices of mango, and drizzle with the remaining coconut sauce. Garnish with sesame seeds or mung beans if desired.

  • This recipe can be made ahead of time; just reheat the sticky rice and coconut sauce before serving.
