- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 medium onion, finely chopped
- 1 can (13 oz) full-fat coconut milk
- 1/2 cup creamy peanut butter
- 2 tbsp low-sodium soy sauce
- 2 tbsp red curry paste (adjust for spice level)
- 2 tbsp vegetable oil (canola or grapeseed)
- 1 tsp brown sugar
- Juice of 1 lime
Instructions
- Prepare your ingredients by dicing the chicken and chopping the garlic and onion.
- Heat vegetable oil in a large skillet over medium heat. Sauté onions until translucent, about 5 minutes.
- Add the diced chicken and minced garlic; cook until chicken is no longer pink, about 7-10 minutes.
- Stir in coconut milk, peanut butter, red curry paste, soy sauce, sugar, and lime juice. Mix well and let simmer for about 10 minutes.
- Taste and adjust seasoning as needed before serving warm over rice or noodles.
Notes
- This recipe can be adjusted for spice by varying the amount of red curry paste used.
