Description

A delicious and creamy dish combining chicken, coconut milk, and peanut butter.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 can (13 oz) full-fat coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp red curry paste (adjust for spice level)
  • 2 tbsp vegetable oil (canola or grapeseed)
  • 1 tsp brown sugar
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by dicing the chicken and chopping the garlic and onion.
  2. Heat vegetable oil in a large skillet over medium heat. Sauté onions until translucent, about 5 minutes.
  3. Add the diced chicken and minced garlic; cook until chicken is no longer pink, about 7-10 minutes.
  4. Stir in coconut milk, peanut butter, red curry paste, soy sauce, sugar, and lime juice. Mix well and let simmer for about 10 minutes.
  5. Taste and adjust seasoning as needed before serving warm over rice or noodles.
