Description

A delicious and refreshing chicken salad featuring shredded chicken, grapes, and walnuts, perfect for a light meal or side dish.


Ingredients

Scale
  • 2 cups shredded chicken
  • 2 stalks celery, chopped
  • ¼ cup red onion, chopped
  • ½ cup grapes, quartered
  • ¼ cup fresh parsley, chopped
  • 2 Tbsp walnuts, chopped
  • ½ cup Greek yogurt
  • 12 Tbsp Dijon mustard
  • 1 large lemon, juiced
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  1. Shred or chop the chicken, celery, red onion, grapes, walnuts, and parsley.
  2. Whisk together the dressing ingredients in the bottom of a large bowl.
  3. Add the chicken and other ingredients and toss everything together.
  4. Give it a taste and add more salt as needed.
  5. Hint: to make shredding the chicken even easier, pulse it a few times in a food processor.

  • This salad is great served on its own or with crackers.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
