Deliciously moist banana muffins made with whole wheat flour and sweetened naturally.
Ingredients

- 3 ripe bananas (mashed)
- 1 cup whole wheat flour
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1/4 cup melted coconut oil or unsalted butter
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 cup chopped nuts or dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mash the ripe bananas until smooth.
- Mix in honey or maple syrup, eggs, and melted coconut oil until creamy.
- Gradually fold in whole wheat flour, baking powder, and cinnamon until just combined.
- Pour batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until golden brown; a toothpick should come out clean.
- Allow muffins to cool in the tin for five minutes before transferring to wire racks.
Notes
- Make sure bananas are very ripe for the best sweetness.
- Store muffins in an airtight container to keep them fresh.
