Description

A delicious and easy treat made with white chocolate, peanut butter, Rice Krispies, and mini marshmallows.


Ingredients

Scale
  • 1 bag (12 oz) white chocolate chips
  • 1/2 cup creamy peanut butter
  • 2 cups Rice Krispies cereal
  • 1 cup mini marshmallows
  • to taste mini chocolate chips, mini m&m’s, or sprinkles (garnish for the top)

Instructions

  1. In a microwave-safe large bowl or glass measuring cup, add the white chocolate chips and creamy peanut butter. Microwave in 30-second intervals, stirring each time, until the mixture is completely melted and smooth.
  2. Immediately add the Rice Krispies cereal and mini marshmallows into the melted white chocolate mixture, and stir until combined.
  3. Drop heaping spoonfuls onto a parchment paper-lined baking sheet and sprinkle some mini chocolate chips (m&m’s or sprinkles, whatever you are using) on top of each cookie.
  4. Allow the cookies to set at room temperature (about 1 hour). Serve & enjoy!

Notes

  • I use a large 6-cup or 8-cup pyrex glass measuring cup for melting.
  • I use a 2 tablespoon or 3 tablespoon cookie scoop for dropping the heaping spoonfuls.
