- 1 cup plain Greek yogurt
- 1 cup fresh or frozen blueberries
- 2 tbsp maple syrup (plus more for serving)
- 1/4 cup granulated sugar (for sauce)
- 1 tbsp lemon juice
Instructions
- In a shallow bowl, whisk together eggs, milk, cinnamon, and a pinch of salt.
- Dip each slice of bread briefly in the egg mixture, allowing it to soak without falling apart.
- Heat a non-stick skillet over medium heat; melt butter and cook each slice until golden brown, about 3-4 minutes per side.
- For the blueberry sauce, combine blueberries, sugar, and lemon juice in a saucepan over medium heat. Cook until bubbly and thickened (about 5-7 minutes).
- Slice the French toast into fingers and serve warm with Greek yogurt and blueberry sauce drizzled on top.
