  • 1 cup fresh or frozen blueberries
  • 2 tbsp maple syrup (plus more for serving)
  • 1/4 cup granulated sugar (for sauce)
  • 1 tbsp lemon juice

Instructions

  1. In a shallow bowl, whisk together eggs, milk, cinnamon, and a pinch of salt.
  2. Dip each slice of bread briefly in the egg mixture, allowing it to soak without falling apart.
  3. Heat a non-stick skillet over medium heat; melt butter and cook each slice until golden brown, about 3-4 minutes per side.
  4. For the blueberry sauce, combine blueberries, sugar, and lemon juice in a saucepan over medium heat. Cook until bubbly and thickened (about 5-7 minutes).
