Ingredients

- 1 can fava beans (drained and rinsed)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1 cup red bell pepper (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh parsley (chopped)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon garlic (minced)
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon black pepper (to taste)
Instructions
- In a large mixing bowl, combine the chickpeas, fava beans, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- In a separate bowl, whisk together the olive oil, lemon juice, garlic, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
