Description

A refreshing salad made with chickpeas, fava beans, and fresh vegetables, drizzled with a light lemon dressing.


Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 can fava beans (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 cup red bell pepper (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon garlic (minced)
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine the chickpeas, fava beans, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, garlic, salt, and black pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
