Description

Delicious cinnamon cookies with a gooey caramel center.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 16 soft caramel candies
  • 1/4 cup cinnamon sugar (for rolling)

Instructions

  1. In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  2. Add in the egg and vanilla extract. Mix until just combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.
  5. Cover and chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop out tablespoon-sized balls of dough. Press a soft caramel candy into the center of each, then roll the dough around it to fully encase.
  8. Roll each ball in cinnamon sugar and place on the prepared baking sheet.
  9. Bake for 10–12 minutes, until the edges are golden and the centers look slightly underbaked.
  10. Cool on the tray for 5 minutes before transferring to a wire rack. Serve warm for gooey caramel centers!

Notes

  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • Make sure the dough is chilled well for easier handling.
  • These cookies are best enjoyed warm when the caramel is still gooey!
