Description
Delicious cinnamon cookies with a gooey caramel center.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 16 soft caramel candies
- 1/4 cup cinnamon sugar (for rolling)
Instructions
- In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
- Add in the egg and vanilla extract. Mix until just combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.
- Cover and chill the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out tablespoon-sized balls of dough. Press a soft caramel candy into the center of each, then roll the dough around it to fully encase.
- Roll each ball in cinnamon sugar and place on the prepared baking sheet.
- Bake for 10–12 minutes, until the edges are golden and the centers look slightly underbaked.
- Cool on the tray for 5 minutes before transferring to a wire rack. Serve warm for gooey caramel centers!
Notes
- For a richer flavor, use dark brown sugar instead of light brown sugar.
- Make sure the dough is chilled well for easier handling.
- These cookies are best enjoyed warm when the caramel is still gooey!
