Description

Deliciously crispy baked sweet potato rounds seasoned with herbs and spices.


Ingredients

  • 3 lb sweet potatoes (about 3 large potatoes)
  • 2 Tbsp extra virgin olive oil (or avocado oil)
  • ½ tsp salt (more to taste)
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ Tbsp fresh thyme, leaves removed from stems
  • 1 tsp Italian seasoning
  • 1 Tbsp maple syrup
  • ½ tsp cinnamon

Instructions

  1. Preheat the oven to 425℉ (218°C). Spray a parchment-lined baking sheet or baking dish with cooking spray to prevent the sweet potato rounds from sticking.
  2. Give the sweet potatoes a good rinse. You can remove the skin if you want to, but I keep the skin on for more texture and dietary fiber.
  3. Slice the potato widthwise into thin pieces using a sharp knife. The size of your slices will be based on personal preference. Some people prefer thick rounds while others like them thinner.
  4. Pile the sliced sweet potatoes in the center of the prepared baking sheet. Top with olive oil, salt, black pepper, and other toppings. Using your hands, make sure each slice is well coated on both sides. If preferred, you can do this part in a large bowl.
  5. Line the sweet potatoes in a single layer side by side, ensuring they do not overlap for even cooking.
  6. Bake in the preheated oven for 30-40 minutes, flipping halfway through. Cooking time will vary depending on the size of your slices and your oven.
  7. The sweet potatoes are done cooking when they are a golden brown color.
  8. Hint: for best results, be sure to line the sweet potatoes in an even layer that doesn’t overlap. You may need to do a couple of batches depending on how large your baking sheet is.

  • For extra flavor, consider adding a sprinkle of Parmesan cheese before baking.
