- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3 large eggs (room temperature)
- 1/2 cup unsalted butter (softened)
- 1 cup whole milk (or almond/oat milk)
- 1 cup fresh strawberries (chopped)
- 2 tsp vanilla extract
- 2 cups powdered sugar (for frosting)
- 1 cup heavy cream (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Gradually alternate adding dry ingredients with milk until fully combined.
- Gently fold in chopped strawberries.
- Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool before frosting with whipped heavy cream mixed with powdered sugar.
Notes
- Make sure eggs are at room temperature for better mixing.
- You can substitute whole milk with almond or oat milk if preferred.
