Ingredients

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • 1 cup whole milk (or almond/oat milk)
  • 1 cup fresh strawberries (chopped)
  • 2 tsp vanilla extract
  • 2 cups powdered sugar (for frosting)
  • 1 cup heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Gradually alternate adding dry ingredients with milk until fully combined.
  6. Gently fold in chopped strawberries.
  7. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow cakes to cool before frosting with whipped heavy cream mixed with powdered sugar.

Notes
