Description

Delicious mini tacos filled with seasoned ground beef and topped with cheddar cheese, lettuce, and a tangy sauce.


Ingredients

  • 1 lb ground beef
  • 810 mini tacos
  • 10 slices cheddar cheese
  • 1 cup chopped lettuce
  • to taste Salt
  • ½ cup caramelized onions
  • 3 tbsp mayo
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tbsp pickle juice or rice vinegar
  • 12 tbsp caramelized onions
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • to taste Salt

Instructions

  1. Form small balls of ground beef. Place each one inside a tortilla and press it down to smash the beef thinly across the surface of the tortilla. Season with salt and black pepper.
  2. Heat oil in a skillet over medium-high heat. Place the tacos beef-side down in the pan and press gently so the meat makes full contact with the surface. Cook until browned and crispy. Flip and immediately top with a slice of cheddar cheese. Cook until the tortilla is golden and the cheese melts.
  3. In a small bowl, mix together all the sauce ingredients until smooth and well combined.
  4. Spread the sauce inside each taco, then add chopped lettuce and caramelized onions. Fold in half and serve immediately while hot and crispy. Enjoy!

Notes

  • Adjust the spiciness by adding more or less chili powder.
  • Serve with salsa or hot sauce for extra flavor.
