- 2 pounds red potatoes
- 3 tablespoons olive oil
- 1 cup grated Parmesan cheese (freshly grated)
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 0 teaspoon salt
- 0 teaspoon black pepper
Instructions
- Wash and scrub the red potatoes, then chop them into 1-inch bite-sized chunks.
- Toss the cut potatoes in a mixing bowl with olive oil, salt, black pepper, garlic powder, and Italian herbs.
- Coat the potatoes thoroughly, then add some grated Parmesan cheese, reserving a bit for later.
- Spread the potatoes in a single layer on a large baking sheet.
- Roast in a preheated oven at 400°F (200°C) for 30-35 minutes, flipping halfway through.
- In the last 5 minutes of roasting, sprinkle reserved Parmesan cheese over the top.
Notes
- For best results, use freshly grated Parmesan cheese.
- Adjust salt and pepper to taste.
