- 450g lean ground beef
- 185g long-grain white rice, uncooked
- 425g black beans, rinsed
- 280g diced tomatoes with green chilies
- 480ml beef broth
- 110g shredded cheddar cheese
- 1 tbsp taco seasoning
- Fresh cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat; drain fat.
- Stir in the rice, black beans, tomatoes with chilies, beef broth, and taco seasoning.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Sprinkle with cheese, cover for 1 minute to melt, and garnish with cilantro.
Notes
- This dish can be customized by adding your favorite vegetables.
- For a spicier flavor, consider adding jalapeños or a dash of hot sauce.
