Description

A delicious farro dish with mixed nuts and fresh herbs.


Ingredients

Scale
  • 1 cup whole grain farro
  • 2 cups vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup mixed nuts (almonds, walnuts, or pecans), toasted
  • 2 tablespoons olive oil
  • ¼ cup fresh parsley or thyme, chopped

Instructions

  1. Rinse the farro under cold water until clear, then drain.
  2. In a medium saucepan, heat olive oil over medium heat. Sauté the onion until translucent.
  3. Add garlic and toasted nuts to the pan; cook until fragrant and golden brown.
  4. Pour in vegetable broth and add rinsed farro. Bring to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes until tender.
  5. Let sit covered for five minutes. Fluff with a fork and stir in fresh herbs before serving.
