Ingredients

  • 1 lb boneless chicken pieces, cooked and shredded
  • 2 (28 oz / 794g each) cans crushed tomatoes
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1/2 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 2 tbsp butter

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the minced garlic for about 1 minute, until fragrant, being careful not to burn it.
  2. Add the crushed tomatoes, chicken broth, and onion powder to the pot. Stir well to combine all ingredients.
  3. Bring the mixture to a gentle simmer and let it cook for about 15 minutes, allowing the flavors to meld together.
  4. Stir in the shredded chicken and heavy cream. Continue heating for about 5 minutes, just until the soup is warmed through (do not let it boil once the cream is added).
  5. Stir in the freshly chopped basil right before serving to preserve its vibrant color and fresh flavor.
