Description

A delicious creamy salad made with green beans, potatoes, and a tangy dressing.


Ingredients

  • 2 cups green beans, trimmed
  • 3 cups potatoes, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and cool.
  2. Blanch the green beans in boiling water for 3-5 minutes, then transfer to an ice bath.
  3. In a mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper.
  4. Once the potatoes have cooled, gently fold them into the creamy dressing.
  5. Add the green beans, red onion, and parsley; mix until fully combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.
