Ingredients

- 2 cups green beans, trimmed
- 3 cups potatoes, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and cool.
- Blanch the green beans in boiling water for 3-5 minutes, then transfer to an ice bath.
- In a mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper.
- Once the potatoes have cooled, gently fold them into the creamy dressing.
- Add the green beans, red onion, and parsley; mix until fully combined.
- Chill in the refrigerator for at least 30 minutes before serving.
