Description
A classic macaroni salad with hard-boiled eggs, creamy mayonnaise, and delicious sweet pickle relish.
Ingredients

- 1 ½ cups elbow macaroni (dry)
- 4 large hard-boiled eggs
- ½ cup mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar
- 2 tablespoons sweet pickle relish
- ¾ cup green peas (thawed if frozen)
- ½ cup chopped celery (optional)
- ¼ teaspoon paprika (plus more for garnish)
- Salt and pepper to taste
Instructions
- Boil macaroni in salted water until al dente. Drain and rinse under cold water. Let it cool.
- In a large bowl, whisk together mayonnaise, mustard, vinegar, relish, salt, and pepper.
- Chop the boiled eggs, reserving a few slices for garnish. Add to the dressing.
- Stir in green peas and chopped celery if using.
- Add the cooled macaroni and gently mix until everything is well coated.
- Chill for at least 1 hour before serving.
- Garnish with egg slices, paprika, and fresh herbs.

- Feel free to customize with additional vegetables or proteins.
