Description

Ingredients

  • 1 head cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth or chicken broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Optional: Shredded chicken, ground beef, or sausage

Instructions

  1. In a large pot, heat some oil over medium heat. Sauté the onions, carrots, and celery for 5-7 minutes until softened.
  2. Add the minced garlic and stir for 1 minute until fragrant.
  3. Stir in the chopped cabbage, diced tomatoes, and broth. Season with salt and pepper to taste.
  4. Bring to a gentle boil, then reduce heat and let simmer for 30-40 minutes until cabbage is tender.
  5. If using, cook the protein in a separate pan and stir into the soup before serving.
  6. Adjust seasoning as needed before serving. Enjoy warm!
