A hearty and healthy soup made with fresh vegetables and optional protein.
Ingredients

- 1 head cabbage, chopped
- 1 onion, diced
- 2 carrots, sliced
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth or chicken broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Optional: Shredded chicken, ground beef, or sausage
Instructions
- In a large pot, heat some oil over medium heat. Sauté the onions, carrots, and celery for 5-7 minutes until softened.
- Add the minced garlic and stir for 1 minute until fragrant.
- Stir in the chopped cabbage, diced tomatoes, and broth. Season with salt and pepper to taste.
- Bring to a gentle boil, then reduce heat and let simmer for 30-40 minutes until cabbage is tender.
- If using, cook the protein in a separate pan and stir into the soup before serving.
- Adjust seasoning as needed before serving. Enjoy warm!
