Description
A flavorful and creamy chicken curry made with spices and yogurt.

- 700g boneless chicken thighs, cut into bite-ish pieces
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tsp garam masala
- 1 tsp ground turmeric
- 2 tsp ground cumin
- 2 tsp chili powder
- Salt, to taste
- 2 tbsp butter
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 400g can tomato puree
- 1/2 cup heavy cream
- 1 tbsp sugar
- Handful fresh coriander, chopped
- Optional: handful frozen peas
Instructions
- Marinate the chicken: Chuck the chicken into a big bowl with yogurt, lemon juice, garam masala, turmeric, cumin, chili powder, and a good pinch of salt. Mix with your hands until coated. Cover and stick in the fridge for 30 minutes.
- Sear the chicken: Heat a large, deep pan over medium-high. Drop in a tablespoon of butter. Add the chicken, shaking off excess marinade. Brown on both sides.
- Cook the onion and aromatics: In the same pan, lob in the remaining butter, then the onions. Cook until soft and golden, stirring lots and scraping all those brown bits off the bottom. Toss in the garlic and ginger; fry for about a minute.
- Add the tomato puree: Pour it in and stir. Let it cook for 10 minutes on low, stirring so it doesn’t catch.
- Add chicken and cream: Plonk the chicken back in with all its juices. Pour in the cream and sprinkle in the sugar. Stir, cover, and let it bubble gently for 10–15 minutes until the chicken is cooked through.
- Season and serve: Taste—add salt if needed, or a splash more cream if it’s too tangy. Finish with chopped coriander.
Notes
- This recipe can also include a handful of frozen peas stirred in at the end.
- For a slightly different flavor, lime can substitute lemon juice.
- Ghee can replace butter for a fancier touch.
